BABA 'WITH LIMONCELLO ON WILD BERRIES SAUCE

Limoncello cream, ingredients for 30 puffs
  • 170 g flour 00
  • 250 grams of sugar
  • 6 yolks
  • 1 liter of milk
  • 50 g of limoncello
For the glaze add:
  • 100 g liquid cream
  • 50 g Limoncello

Once the custard base has cooled, add 50 g of limoncello to fill the cream puff. Set aside 1/3 of the cream and add another 50 g of limoncello and 100 g of fresh cream for the glaze. Insert the cream with a pastry bag inside the cream puff and dip it lightly on one side in the limoncello glaze.
